A Dam Good Day in Peekskill: English Muffin Breakfast Sandwich Recipe You’ll Crave

    There’s something special about knowing exactly where your food comes from - and even better when it tastes this good. We recently took a trip up to Peekskill, New York to visit the bakery behind one of our favorite finds on Bubble Goods: Dam Good English Muffins.

    Made in small batches with a sourdough base and clean, simple ingredients, these muffins are crispy on the outside, soft on the inside, and totally DAM GOOD. After touring their production space and meeting the team behind the brand, we knew we had to take a few packs home.

    Naturally, we got to work in the kitchen. Here's the English Muffin Sandwich recipe we made—and let’s just say, it lived up to the name.

     


    English Muffin Sandwich Recipe

    Ingredients:

    For the sandwich:

    For the Spicy Mayo:

    • 3 tbsp mayo

    • 1 tbsp gochujang

    For the Quick Pickled Onions:


    Instructions:

    1. Cook the Bacon
    Preheat your oven to 350°F. Place bacon strips on a baking sheet and bake for 12–15 minutes, or until crispy.

    2. Make the Pickled Onions
    In a small pot, bring water, vinegar, honey, peppercorns, and salt to a simmer. Place sliced onion in a mason jar and pour the hot liquid over top. Let sit for at least 10 minutes—longer if you love that extra tang.

    3. Mix the Spicy Mayo
    Combine mayo and gochujang in a small bowl and set aside.

    4. Fry the Egg
    In a skillet, heat ghee over medium. Crack in the egg and fry until the edges are crispy and the yolk is slightly runny.

    5. Toast the Muffin
    Split and toast the Dam Good English Muffin until golden brown.

    6. Assemble the Sandwich
    Spread spicy mayo on one half of the muffin. On the other half, layer avocado slices. Add bacon and the fried egg, then top with arugula and pickled onions. Sprinkle with salt and pepper to taste. Close it up—and enjoy.
