ABOUT:
Grown in Old Snowmass, CO. This is a heritage wheat varietal dating back to 19th century France, where it was a favorite amongst bakers. It has a rich nutty flavor and can be used in any bread recipe. Protein: 11.4%.

Great for Artisan Bread loaves, Brownies, Cookies, Pancakes, Pizza, and Breads.

Here at Roaring Fork Mill, all of our grains are grown by Colorado farms using organic and regenerative practices. We focus on milling ancient and heritage wheat varieties that require fewer inputs and help to rebuild the topsoil. All of our flour is non-GMO, unbleached and unbromated. Fun Fact: Roaring Fork Mill is named after the Roaring Fork Valley of Carbondale, CO. Which in turn is named after the Roaring Fork river, a tributary of the Colorado River. The Ute Indians called the river "Thunder River" because of the sound it makes during spring runoff.
