At Bubble Goods, we celebrate the unique stories of our makers— we’re spotlighting Hedvig, the founder of Norwegian Baked, whose journey began in her aunt’s kitchen in Norway and led to a thriving business in Brooklyn.
For Hedvig, it all traces back to one unforgettable summer in Norway, when she followed the enticing aroma of something freshly baked to her aunt’s kitchen. There, she discovered her aunt baking crispbread—or Knekkebrød, as it’s known in Norway. It was love at first bite! Inspired by its wholesome, delicious simplicity, Hedvig brought the memory back to Brooklyn, her second home, and began experimenting with the family recipe.
After perfecting the balance of ingredients and flavor, Hedvig started sharing her crispbread with friends and family (lucky them!) and quickly realized she was onto something special. From this passion, Norwegian Baked was born—a brand that brings a little taste of Norway to tables in the U.S.
Hedvig’s dedication to her craft and love for sharing her heritage have made Norwegian Baked a favorite among Bubble Goods customers. Her Knekkebrød is not only wholesome and nutritious but also packed with the authentic flavors that make it so unique.
Hedvig's sales have climbed and to honor Hedvig’s success, the Bubble Goods team had the privilege of presenting her with our In the Bag award after she hit an impressive sales milestone.
We visited her at the Park Slope Farmers Market in Brooklyn to celebrate her hard work, creativity, and the way her crispbread has captured the hearts (and taste buds) of so many.
